Loaded Nachos with Melted Cheese, Black Beans, and Bell Pepper

Complete your quiz night with these crowd-pleasing nachos, crafted by Santa Maria for authentic Tex-Mex flavor.

Ingredients

For 4 people

For the nacho dish

  • 250 g black beans
  • 1 bag of Santa Maria Taco Seasoning Mix
  • 1½ piece of red pepper
  • 200 g corn
  • ½ jar of Santa Maria Red Jalapeño
  • 200 g grated cheese
  • 1 bag of Santa Maria Nacho Chips
  • 100 ml water
  • 1 tbsp oil

Toppings

  • 200 g tomato
  • 1 red onion
  • 1 avocado
  • 30 g fresh coriander
  • 1 jar of Santa Maria Chunky Wrap Salsa Mild

Preparation method

  1. Preheat the oven to 225 °C.
  2. Distribute the nachos evenly in a baking dish.
  3. Cut the red pepper into pieces and fry in oil.
  4. Add the black beans, corn, jalapeños, taco seasoning mix and the water. Stir together and let it simmer for 5-10 minutes without lid.
  5. Distribute the nacho chips evenly in a baking dish and top with the black beans, bell pepper, jalapeños and corn.
  6. Sprinkle with the cheese and bake in the oven for about 5 minutes until the cheese has melted.
  7. Dice the tomatoes, onion and avocado and place on top of the melted cheese. Garnish with fresh coriander.
  8. Serve with the salsa.
