Ingredients (per person):
– 50 grams quinoa
– 50 grams tofu
– 100 grams spinach
– Red onion
– Walnuts or mixed unsalted nuts
– Red bell pepper
– Dried apricots
– Mango, pineapple, apple, or melon (sweet fruit of choice)
– Mint and/or chives
– Cinnamon
– Coconut oil
For the dressing:
– Lime
– Feta
– Full-fat yogurt
– Olive oil
– Balsamic vinegar
Preparation: Boil quinoa in plenty of water for 8 minutes. Drain, rinse with cold water, and transfer to a bowl. Drain tofu, slice it, sprinkle with cinnamon, and fry in coconut oil until golden.
Finely chop spinach, red onion, bell pepper, fruit, and mint; add to the bowl with nuts, crumbled feta, and juice of one lime. Drizzle with olive oil, balsamic vinegar, and a splash of yogurt. Toss gently and enjoy.
