Preparation: 30 mins - Cooking:15 min - For 4 people

Difficulty: easy - Budget per person: €0.96

Ingredients

- 4 slices of cooked ham

- 4 fine endives

- 100g grated cheese

- 50 cl of milk

- 100 g of butter

- 2 tablespoons of flour

- Salt &pepper

How to

1. I remove the outer leaves, possibly withered, from the endives. And I cut hard cones with a knife.

2. I then cook them in a large pot of boiling salted water for 20 min.

3. Meanwhile, I prepare my bechamel sauce. Nothing could be simpler, just follow my preparation instructions in this article.

4. I add half of the grated Gruyère cheese to my sauce.

5. I preheat my oven to 180°.

5. I drain the endives. Do not hesitate to press them gently to remove the cooking water.

6. I butter a baking dish. Then I wrap each endive in a slice of ham. Then I arrange them in the dish.

7. I cover them with the bechamel sauce. I then sprinkle them with the remaining grated cheese.

8. I put the dish in the oven and leave to brown for 20 min.

It is a balanced family dish, quick to make and simple to prepare.

You can make it in large quantities and reheat it the next day. It saves you time!

And it's a great way to get kids to eat vegetables. Especially when you add bechamel sauce with the ham!

What more could you ask for?

If you want to have a lighter recipe, do not put bechamel sauce.

Tip:how to reduce the bitterness of endives?

To remove this bitter taste from endives, wash them under running cold water.

But don't let them soak. Then add a little lemon juice to the cooking water.

Also cut off the yellow end of the endives:this is the most bitter part.

And don't forget to remove the hard part!

Budget

- 4 slices of cooked ham:180 g at €9.56 per kilo, i.e. €1.72

- 4 fine endives:around 600 g at €1.80 per kilo, i.e. €1.08

- 100 g of grated cheese:€6.74 per kilo, i.e. €0.67

- 50 cl of milk:€0.71 per liter or €0.35

- 2 tablespoons of flour:30 g at €0.95 per kilo, i.e. €0.03

An addition of €0.96 per person or €3.85 for 4 guests.

Endives au gratin with ham is a family dish that I cook very often.

Inexpensive and easy to prepare, it would be a shame to miss it!
