Turkish Pizza with Lamb and Eggplant

Ingredients
• 1 tbsp olive oil
• 3 legs of lamb, cut into strips
• 1 red onion
• 1 eggplant
• 2 cloves garlic
• 1 tsp paprika powder
• 400 g ready-made pizza dough
• 150 ml mashed tomatoes
• 80 g feta
• 1.5 tsp chopped mint
• Honey, to drizzle
Preparation
Preheat the oven to 200°C (gas mark 6). Heat half the oil in a pan and fry the lamb strips for about 2 minutes until golden brown. Remove from the pan. Add the remaining oil, then fry the sliced onion. Add the diced eggplant and cook for 5-6 minutes until golden. Stir in the crushed garlic and paprika powder briefly. Season with salt and pepper.
Unroll the pizza dough on a baking or pizza tray. Spread with mashed tomatoes, then top with the eggplant mixture and lamb. Bake until the crust is crispy.
Crumble feta over the top, scatter with mint, and drizzle with honey before serving.
Tip: For a spicy kick, sprinkle chili flakes over the pizza.
