Preheat the oven to 200°C. In a bowl, toss the cauliflower florets with a drizzle of sunflower oil, cumin, turmeric, paprika, and cayenne pepper. Spread on a parchment-lined baking tray and roast for 20 minutes until golden and tender.
In another bowl, mix the cooked quinoa with chopped mint, parsley, extra virgin olive oil, and lemon juice. Season with salt and pepper to taste.
