Recipe for bell pepper buddha bowl

The Buddha bowl, healthy and delicious, but also the ideal meal on the couch if you're going to watch the football match on the couch tonight.

Ingredients

For 4 people

  • 2 orange bell peppers, in strips
  • 1 cauliflower, in florets
  • 1 cucumber, sliced
  • 200 g chickpeas, precooked and drained
  • 300 g cooked quinoa
  • 5 g fresh mint, finely chopped
  • 5 g fresh parsley, finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 4 tsp ground cumin
  • 2 tsp turmeric
  • 2 tsp paprika powder
  • 2 tsp cayenne pepper
  • 8 tbsp hummus
  • sunflower oil
  • salt and pepper

Preparation method

Preheat the oven to 200 degrees. In a bowl, mix the cauliflower florets and a dash of sunflower oil with the cumin, turmeric, paprika and cayenne pepper. Spread the cauliflower on a baking tray lined with baking paper. Roast the cauliflower florets in the preheated oven for 20 minutes.

In a bowl, combine the cooked quinoa with the chopped mint and parsley, extra virgin olive oil and lemon juice and stir to combine. Taste and season with salt and pepper.

Place quinoa salad in bowls and garnish with cauliflower, orange bell pepper, cucumber, chickpeas and hummus. Serve immediately.
