Vibrant Bell Pepper Buddha Bowl: Healthy Recipe for 4

This colorful Buddha bowl is packed with nutrients, bursting with flavor, and the perfect healthy meal to enjoy on the couch during tonight's big football match.

Ingredients

For 4 people

  • 2 orange bell peppers, in strips
  • 1 cauliflower, in florets
  • 1 cucumber, sliced
  • 200 g chickpeas, precooked and drained
  • 300 g cooked quinoa
  • 5 g fresh mint, finely chopped
  • 5 g fresh parsley, finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 4 tsp ground cumin
  • 2 tsp turmeric
  • 2 tsp paprika powder
  • 2 tsp cayenne pepper
  • 8 tbsp hummus
  • sunflower oil
  • salt and pepper

Preparation method

Preheat the oven to 200°C. In a bowl, toss the cauliflower florets with a drizzle of sunflower oil, cumin, turmeric, paprika, and cayenne pepper. Spread on a parchment-lined baking tray and roast for 20 minutes until golden and tender.

In another bowl, mix the cooked quinoa with chopped mint, parsley, extra virgin olive oil, and lemon juice. Season with salt and pepper to taste.

Divide the quinoa salad into bowls. Top with roasted cauliflower, bell pepper strips, cucumber slices, chickpeas, and a dollop of hummus. Serve immediately for the freshest flavors.
