Easy Homemade Cauliflower Pizza Recipe: Gluten-Free, Low-Carb Delight for 4

While store-bought cauliflower pizza bases are handy, creating your own at home is straightforward and delivers superior flavor and freshness.

Main course for 4 persons
Preparation time: 10 minutes + 1 hour 10 minutes resting

For the pizza base

  • 900 g cauliflower, cut into florets
  • 1 egg, beaten
  • 100 g fresh goat cheese
  • 2 tbsp cornmeal (polenta)
  • 2 tbsp olive oil

For the topping

  • 1 roll soft goat cheese
  • 1 small red onion
  • 1 can or jar (400 ml) tomato sauce or pizza sauce
  • 75 g baby spinach
  • 75 g baby kale or cavalo nero (palm cabbage)
  • 2 tbsp walnuts
  • Extra needed: food processor, large springform pan greased and lined with baking paper

Preparation method
Preheat the oven to 200°C. Wash the cauliflower florets and pat dry. Grate coarsely into rice-like grains using a grater or food processor. Boil in lightly salted water for 3 minutes, then drain thoroughly in a sieve. Transfer to a clean tea towel, bundle up, and squeeze out excess moisture.

Mix the cauliflower grains in a bowl with the beaten egg, fresh goat cheese, cornmeal, and a pinch of salt. Knead into a cohesive dough ball. Roll out on the prepared baking sheet into a large circle and brush the top with olive oil.

Bake for 25-35 minutes until dry and golden. Remove from the oven. Slice the soft goat cheese and cut the onion into rings. Spread pizza sauce generously over the base, top with goat cheese slices, and bake for another 5-7 minutes until the cheese melts.

Finish by scattering onion rings, baby spinach, baby kale (or shredded cavalo nero), and walnuts on top. Serve immediately.
