Easy Vegetarian Burritos Recipe: Flavorful Meatless Meal for Any Night

Ingredients for Burritos

  • 12-16 tortilla wraps (carrot from No Fairytales or regular)
  • 4 vine tomatoes
  • 200g iceberg lettuce
  • 1 green pepper
  • 200g corn
  • 200g black beans
  • 4 avocados
  • Grated aged cheese
  • Sour cream
  • Bunch of coriander
  • Tortilla chips

Vegetarian Mince

  • 2 packs Garden Gourmet Minced
  • 1 tsp cumin powder
  • 1 tsp cayenne pepper
  • 1 medium red onion
  • 1 garlic clove
  • 4 tbsp tomato puree
  • Water
  • 2 tbsp olive oil

Step-by-Step Preparation
1. Finely chop the red onion and crush the garlic clove. Dissolve the tomato puree in a little water.
2. Heat a wok over medium heat and add the olive oil. Sauté the onion and garlic until softened, then add the Garden Gourmet mince. Season with cayenne pepper, cumin, and the tomato puree mixture. Cook until flavorful and heated through.
3. Dice the green pepper and sauté briefly if desired. Remove seeds from tomatoes and dice. Drain the corn and black beans. Shred the iceberg lettuce into strips.
4. Mash the avocados with salt and pepper to taste.
5. Arrange the avocado mash, diced tomatoes, pepper, corn, beans, lettuce, and vegetarian mince in separate bowls for easy assembly.
6. Warm the tortillas in a dry frying pan. Serve with grated aged cheese, sour cream, fresh coriander, and tortilla chips on the side.
7. Build your burrito just the way you like it!
