Indulge in this comforting cheesy pasta bake, blending roasted bell peppers with tender penne for a family favorite.
Serves 4
Preheat the oven to 200°C. In a bowl, toss the bell peppers with the onion, red pepper, paprika, and a drizzle of olive oil. Spread on a baking tray lined with parchment paper and roast for 20 minutes. Transfer the roasted vegetables to a food processor and blend until smooth. Season with salt and pepper to taste.
Grease an oven dish with olive oil. Combine the cooked penne with the bell pepper sauce in a bowl and mix thoroughly. Spread the mixture into the prepared dish and top with grated cheese. Bake for 20-25 minutes until golden and bubbly.
