Ingredients for Marije's Birthday Cake
- 200 grams unsalted butter
- 250 grams Hands off My Chocolate Birthday Cake bar
- 60 grams cocoa powder
- 400 milliliters boiling water
- 300 milliliters buttermilk
- 500 grams flour
- Pinch of salt
- 6 eggs
- 600 grams caster sugar
- 3 teaspoons baking powder
Topping
- 300 grams unsalted butter
- 300 grams margarine
- 600 grams powdered sugar
- 1 to 2 teaspoons vanilla extract
- Disco dip
- 1 Hands off My Chocolate Birthday bar
Instructions
- Preheat the oven to 180°C (electric oven).
- Grease three 20 cm cake tins and line with baking paper.
- Melt 250 grams of Hands off My Chocolate Birthday Cake bar au bain-marie.
- Prepare three bowls: Mix cocoa powder with boiling water and buttermilk in the first. Combine flour, baking powder, and salt in the second. In the third, beat eggs on high for 3 minutes, add sugar and vanilla extract, then incorporate the melted chocolate. Gradually fold in flour and cocoa mixtures for a smooth batter – avoid overmixing to prevent fluffiness.
- Divide batter evenly among tins and bake one at a time for 35-40 minutes. Cool, then invert and remove from tins.
- Level the tops by slicing off any domes for even layers.
- Make buttercream: Beat butter and margarine until soft. Sift in powdered sugar and mix for 10 minutes until light and fluffy.
- Secure the bottom layer on a plate with buttercream. Spread 0.5 cm on top, chill 30 minutes. Repeat for remaining layers.
- Frost the entire cake and refrigerate for 2 hours to set.
- Drizzle with disco dip and top with Hands off My Chocolate Birthday bar (whole or broken).
