Ingredients for sugar-free pepernoten
• 20 grams almond flour
• 150 grams buckwheat flour
• 60 grams coconut oil
• 50 grams coconut blossom sugar
• 5 tablespoons almond milk
• Pinch of cinnamon
• 2 tablespoons gingerbread spices
Instructions
1. Preheat oven to 170°C and line a baking tray with parchment paper.
2. In a bowl, mix dry ingredients and coconut oil with a spatula. Add almond milk gradually until the dough forms balls easily.
3. Roll into small balls and place on the tray.
4. Bake for 20 minutes, then cool completely for maximum crunch.
5. Savor the results!
Tip: Space the pepernoten apart on the tray to prevent sticking.
