Indian Yellow Curry with Sweet Potatoes: Quick, Nutritious Vegetarian Recipe

Ingredients

For 2 persons

  • 1 pack of CelaVita Sweet potato casserole ras el hanout
  • 1 tbsp yellow curry paste
  • 1 tbsp oil
  • 100 g rice
  • 1 garlic clove, crushed
  • 1 onion chopped
  • 100 ml vegetable stock
  • 100 ml coconut milk
  • 2 hard-boiled eggs
  • 7 g fresh coriander
  • 1/2 lime
  • 1 tsp sesame seed

Preparation method

  1. Prepare the sweet potato casseroles according to the instructions on the package.
  2. Prepare the rice according to the instructions on the package.
  3. Heat the curry paste and a tablespoon of oil over high heat. Add the garlic and onions and stir fry for a further 2 minutes.
  4. Add the coconut milk and the stock. Simmer for 5 minutes. Add the sweet potato and let it simmer for another 5 minutes.
  5. Serve the curry with rice, egg, fresh coriander, lime juice and possibly some sesame seeds.
