Recipe:Grilled Lamb Chops with Herbs and Potato Salad

Ingredients for 4 servings:

– 12 lamb chops
– 1 kg potato salad
– 5 tbsp white wine vinegar
– Salt and pepper
– 1 garlic clove
– 2 teaspoons mustard
– 100 ml rapeseed oil or light olive oil
– 2 tbsp freshly chopped tarragon
– 2 tbsp freshly chopped chervil
– 2 tbsp freshly chopped mint

Preparation

First, cook the potatoes in a large saucepan for 15-20 minutes until firm to bite. Meanwhile, put the vinegar in a bowl, season with salt and pepper and add the herbs, garlic, mustard and oil.

Divide 1/3 of the vinaigrette over the lamb chops, reserving the rest for later. Cover the lamb chops and let them soak in the marinade in the refrigerator.

After the cooking process, drain the potatoes and let them cool. Then cut the potatoes into even slices and put them in a large bowl. Divide the rest of the vinaigrette over it and let it steep for five minutes.

Meanwhile, remove the excess marinade from the lamb chops and sear the meat on the grill or in a hot pan for six to eight minutes on each side.

Finally, gently stir the potato salad and serve while the cutlets are still warm.

Hint: Place a few finely chopped spring onions over the potato salad.
