Lamb Chops with Potato and Pea Salad

Ingredients
– 8 lamb chops
– 1 tablespoon olive oil
– Juice of 1 lemon
– 2 teaspoons honey
– 1 pinch chili flakes
For the potato and pea salad
– 50 g butter
– 2 cloves garlic, crushed or finely chopped
– 500 g potatoes, halved, boiled and drained
– 200 g fresh peas
– Juice of ½ lemon
– Salt and freshly ground pepper
– 1 small handful of freshly chopped mint
Preparation
For the marinade, combine the oil, honey, lemon juice and chili flakes in a bowl. Add the lamb chops and marinate for 10 minutes.
Meanwhile, melt the butter in a non-stick pan and gently fry the garlic for a minute. Add the potatoes, peas and lemon juice. Season, add the mint, stir and set aside.
Heat a large griddle or non-stick frying pan to medium heat and sear the lamb for 2-3 minutes on each side and season to taste. Transfer the meat to a large plate, cover and let it rest for a few minutes.
Arrange the potato and pea salad and place lamb on top. Sprinkle with mint and serve immediately.
