Economical and Balanced, My Homemade Ratatouille!

When I prepare a homemade ratatouille, it's a bit like all of Provence who walks into my kitchen.

Its sunny vegetables, colorful and fragrant, are bursting with flavor and provide my whole family with ideal nutritional benefits.

Balanced and economical, it is to be consumed without moderation!

Hot or cold, in summer as in winter, ratatouille is the perfect accompaniment to your meats and white fish with ease.

• 5 tomatoes

• 2 aubergines

• 2 courgettes

• 1 red pepper

• 1 green pepper

• 2 onions

• 2 cloves of garlic

• 1 bouquet garni

• Olive oil

• Salt and pepper

My Mediterranean preparation

Preparation:20 mins – Cooking:50 mins

Economical and Balanced, My Homemade Ratatouille!

1. I wash my vegetables in clean water.

2. I cut my peppers lengthwise, seed them, cut them into strips and then into small pieces.

3. I cut my eggplant into cubes and my zucchini into rounds.

4. I peel and cut my onions into rings, peel and crush my garlic cloves and cut my tomatoes into small cubes.

5. In a sauté pan, I pour 3 tablespoons of oil. Once hot, I throw in my onions.

6. As soon as they are transparent, I pour my peppers into my pan and stir for a few minutes.

7. I lower my heat and add my eggplant and zucchini. I mix, cover and simmer over low heat for 30 minutes.

8. I then add my tomatoes, my garlic, I salt and pepper then place my bouquet garni in my pan.

9. I mix well and cook over low heat, uncovered, for 15 minutes.

If you want to simmer your ratatouille a bit longer, remember to cover it so it doesn't dry out.

My bonus tip

If you find that your ratatouille is slightly too acidic, remember to add one or two pinches of sugar at the end of cooking. But be careful not to abuse it!

• 5 tomatoes:around 480 g at €2.50 per kilo, i.e. €1.20

• 2 aubergines:around 600 g at €3 per kilo, i.e. €1.80

• 2 courgettes:around 400 g at €2.55 per kilo, i.e. €1.02

• 1 red pepper:around 100 g at €3.30 per kilo, i.e. €0.33

• 1 green pepper:around 100 g at €3 per kilo, i.e. €0.30

• 2 onions:around 250 g at €1.85 per kilo, i.e. €0.46

Or sunny vegetables on my plate costing me €1.27 for 1 person or €5.11 for 4 people.
