  1. Wash all vegetables thoroughly in clean water.
  2. Cut peppers lengthwise, remove seeds, slice into strips, then chop into small pieces.
  3. Dice aubergines into cubes and slice courgettes into rounds.
  4. Peel and slice onions into rings, peel and crush garlic cloves, and dice tomatoes.
  5. Heat 3 tablespoons of olive oil in a sauté pan. Add onions once hot.
  6. When onions are translucent, add peppers and stir for a few minutes.
  7. Reduce heat, add aubergines and courgettes. Stir, cover, and simmer on low for 30 minutes.
  8. Add tomatoes, garlic, salt, pepper, and bouquet garni. Stir well.
  9. Cook uncovered on low for 15 minutes. For longer simmering, cover to prevent drying out.
