You'll need 250 g of chocolate, 2 egg yolks, 145 g of butter, and a teaspoon of coffee. For coating, grab about 80 g of bitter cocoa.
These amounts yield around 40 truffles—plenty for my family. At home, you'll see the yield varies slightly based on ball size.
Straightforward Steps
Melt the chocolate and butter over low heat. Off the heat, stir in the egg yolks until smooth. Add the coffee to deepen the chocolate flavor, then chill for about 8 hours until firm.
Once hardened, roll into small balls and dust with cocoa. Store in an airtight container; they'll keep for up to 20 days.
