Instead of settling for plain fromage blanc, I refined the traditional recipe to its essentials: eggs and chocolate. This light version lets you treat yourself guilt-free.

- 4 eggs
- 300g dark or milk chocolate
1. Melt the chocolate in a saucepan with a little water.
2. Meanwhile, separate the whites from the yolks and beat the egg whites until stiff.
3. When very firm, add the equivalent of two tablespoons of cold water (this helps them swell further for better consistency) and continue beating.
4. Once the chocolate is melted, vigorously stir in the egg yolks to prevent them from cooking in the heat, then gently fold in the beaten whites.
Your mousse is ready! I portion it into individual ramekins to ensure everyone gets their fair share.
