Remove the stems from the golden apples and steam for 15 minutes. Cool, then remove the seeds and tough skin to reveal the tender flesh.
Boil and mash the potatoes, blending in the golden apple flesh for a creamy base.
Finely chop and sauté the shallot with crumbled sausage meat until browned. Stir in cumin, ground ginger, and balsamic vinegar; cook until fragrant.
Combine the cooked sausage mixture with the apple-potato mash. Season with salt and pepper. Transfer to a baking dish, top with grated cheese, and bake at 180°C (thermostat 6) for about 30 minutes until golden and bubbly.
