Peel and core the apples, cutting them into fairly large pieces for the best texture.
Generously butter a gratin dish and fill it halfway with the prepared apples. Spread a thick layer of apricot jam evenly over the surface.
Add the remaining apples to fill the dish, then brush with more jam for extra flavor and shine.
Top with large knobs of butter and bake in a hot oven for about 1 hour, until golden and bubbling.
