Difficulty: Easy
Preheat the oven to 200°C (gas mark 6-7).
Rinse the potatoes under cold water and cut them lengthwise about two-thirds deep. Wash the herbs.
Stuff each potato with a piece of bacon plus 1 bay leaf or 1 sprig of rosemary.
Arrange the potatoes on a baking tray, drizzle with olive oil, and season with salt and freshly ground pepper.
Bake for about 20 minutes until crispy.
Serve hot as a delightful appetizer or side dish.
