Preheat the oven to 200°C (th.6/7) with convection and grill settings.
Dice the fish fillets into small pieces.
Halve the passion fruits and scoop out the pulp with a spoon. Strain the pulp through a sieve to extract the juice. Rinse the seeds to separate them, and reserve the empty husks and seeds.
In a bowl, whisk 1 whole egg and 1 egg yolk. Add the diced fish, passion fruit juice, cumin powder, fresh cream, and salt. Mix thoroughly.
Spread the coarse salt evenly in an ovenproof dish. Place the passion fruit halves on top, pressing them firmly into the salt.
Fill the halves with the fish mixture. Sprinkle a few reserved seeds over the top. Bake for 8 minutes.
Serve immediately while hot.
