Traditional Ardèche Crique: Authentic French Potato Pancake Recipe

Ingredients for 4 to 6 people

  • 1kg of potatoes
  • 2 eggs
  • 2 cloves of garlic
  • Parsley
  • Olive oil
  • Salt and pepper

Preparation

Peel, wash, and grate the potatoes into fine shreds for the perfect texture.

Finely chop the fresh parsley and garlic cloves to release their flavors.

In a large bowl, gently combine the grated potatoes, eggs, chopped parsley and garlic, salt, and pepper until well mixed.

Heat a generous amount of olive oil in a large frying pan over medium heat, then pour in the potato mixture, spreading it evenly.

Cook for about 15 minutes until golden and crispy on the bottom, then carefully flip and cook for another 15 minutes to perfection.
