Chef Hubert's New Potato Tagine: Simple, Flavorful Recipe for 4

  • small new potatoes: 1 kg
  • small onions: 6
  • olive oil: 2 tablespoons
  • butter: 20g
  • bay leaf: 1 leaf
  • saffron powder: 11 capsules
  • turmeric: 1 knife tip
  • cumin powder: 1 level teaspoon
  • coriander seeds: 1 pinch
  • fresh cilantro: 6 sprigs
  • salt, ground pepper

Peel, wash, and dry the small new potatoes. Trim the roots and stems from the onions, wash them, and cut into halves or quarters.

Preheat the oven to thermostat 6 (180°C). In a casserole or tagine dish, heat a mix of butter and olive oil over medium heat. Lightly brown the potatoes and onions. Add the bay leaf, coriander seeds, saffron, turmeric, and cumin. Season with salt and freshly ground pepper.

Pour in 10 cl of boiling water, cover, and bake for 40 minutes until the potatoes are tender.
