Easy Fresh Herb Potato Salad with Onions and Radishes

Ingredients for 4 servings

  • 1 kg Charlotte potatoes
  • 1 red onion or 3 small new white onions
  • 1/2 bunch pink radishes
  • 1/2 bunch parsley
  • 1 bunch chives
  • 3 teaspoons capers
  • Juice of 1/2 lemon
  • 6 tablespoons olive oil
  • Salt, pepper

Preparation

Peel the potatoes, cut into bite-sized pieces, and boil in salted water until tender. Drain immediately while still warm.

In a large salad bowl, finely chop the red onion, mince the chives and parsley, and slice the radishes into thin rounds. Stir in the olive oil, lemon juice, salt, pepper, and capers. Add the warm potatoes and gently toss to combine, taking care not to mash them.

Serve warm for maximum flavor or chilled as a refreshing side.
