- 500 g small potatoes
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1/4 teaspoon of each of these aromatic herbs: oregano, basil, rosemary, thyme, sage
- ¼ teaspoon of salt (more or less according to taste)
- 2 pinches of paprika
- 140 g grated parmesan
- 1 teaspoon chopped parsley
- 30 g unsalted butter, cut into small cubes
1. Preheat your oven to 200°C. Clean and rinse the small potatoes. Dry them and cut them in half.
2. Heat an oven-safe frying pan (cast iron works best) and add the olive oil.
3. Add the potatoes and cook until crispy on the surface.
4. Continue cooking, turning frequently, until the skins are golden brown.
5. Push the potatoes into one corner of the pan. Add the garlic and sauté briefly. Stir in the herb mix, salt, and paprika. Mix well.
6. Turn off the heat and sprinkle with parmesan and parsley.
7. Transfer the pan to the oven and roast for 15 minutes.
