Sugar-Free Granola Cups with Yogurt, Honey, and Kiwi

Ingredients for 6 servings:

  • 120 g oatmeal
  • 50 g desiccated coconut
  • 60 g honey
  • 40 g coconut oil
  • 1 pinch of salt
  • 200 g yogurt
  • 2 tsp agave syrup
  • 2 kiwis

Preparation

  1. Preheat oven to 180°C top/bottom heat. Mix oats and desiccated coconut in a bowl. Heat honey, coconut oil, and salt in a saucepan (or microwave) until fully liquid and hot.
  2. Pour over the oat mixture and stir into a uniform dough. Divide into 6 greased muffin tin wells. Press firmly and create a thumb-sized indentation in each.
  3. Bake 15 minutes until golden. Cool in tin, then gently remove (use a small fork). Mix yogurt with agave syrup, fill cups, and top with kiwi slices.
