Ingredients
1 avocado
Maple syrup, to serve
Sinner Stack Toppings
Crispy fried bacon and banana slices
Saint Stack Toppings
A mixture of berries and avocado mousse
For the batter
150 g flour
250 ml soy milk
30 g maple syrup
½ tbsp soy oil (+ extra for frying)
12 g baking powder
Pinch salt
4 g matcha powder
Optional
A few drops of green food coloring, pistachio

Whisk all batter ingredients together until smooth and well blended. Heat a little soy oil in a non-stick frying pan and fry the pancakes in batches, forming nice round shapes.
Meanwhile, prepare the avocado fans. Halve the avocado lengthwise, remove the pit and skin. Thinly slice one half lengthwise, then gently press into a fan shape. Trim with a knife for a perfect round. Repeat with the other half.
Arrange the pancakes into attractive stacks on two plates. Gently place an avocado fan on top of each stack with a spatula. Finish with your chosen toppings and a drizzle of maple syrup. Serve immediately for the ultimate breakfast experience.
