This dessert shines with its fresh, creamy mousse contrasted by a crunchy pecan crumble. Ripe avocados and melted coconut oil deliver a silky texture, while lime juice, zest, and maple syrup create the ideal sweet-tart harmony.
For 6 glasses
Cut the avocados into pieces. Add them to the blender with the lime juice and zest, melted coconut oil, and maple syrup. Blend on medium-high speed for 1 minute until smooth. Taste and adjust with extra maple syrup or lime zest if needed for balance. Spoon into glasses and refrigerate for at least 4 hours.
Preheat the oven to 160°C and line a baking tray with baking paper. Roughly chop the pecans, then mix with grated coconut and honey. Spread on the tray and bake for 10 minutes. Cool, break into pieces, and garnish the chilled mousse with the crumble and fresh raspberries.
