Clafoutis with pears from Cyril Lignac:an ultra gourmet vegan recipe that will amaze all your guests!

The clafoutis it is the star dessert of the summer. After all, who can resist its melting and soft texture? Nobody, especially when the clafoutis is still warm. This "studded" cake is easy to make with all kinds of fruit. The recipes are many and varied. Chef Cyril Lignac has one that can appeal to all taste buds, even vegans:the vegan pear clafoutis . To do this, he uses silken tofu which will give the cream all its smoothness. To this he adds almonds (milk and extract) to flavor the preparation. A pure delight!

Cyril Lignac's vegan pear clafoutis recipe

To make a good pear clafoutis like Cyril Lignac you need:

  • 3-4 ripe pears
  • 160 g of silken tofu
  • 1 vanilla pod
  • 1 tablespoon of almond extract
  • 3 tablespoons of almond milk
  • 65g of flour
  • 1 tablespoon cornstarch
  • 50 g of sugar
  • A piece of vegetable margarine

Preparation steps:

  1. Preheat your oven to 190°C.
  2. In a blender, mix the silken tofu, the pulp of the vanilla pod previously collected, the almond extract and a tablespoon of almond milk until you obtain a smooth cream. The almond will flavor the preparation.
  3. Once the cream is ready, add the flour and cornstarch to thicken it.
  4. Then add the sugar and another 3 tablespoons of almond milk.
  5. Cut the pears into pieces.
  6. Butter a clafoutis mold with vegetable margarine. Place the pear pieces then add the creamy flavored cream.
  7. Bake the clafoutis in the oven at 190°C for 40 minutes.
