Warm goat cheese salad by Cyril Lignac:a gourmet and ultra-vitamin recipe ("With its sweet and salty vinaigrette, it's exquisite!")

As the warm weather approaches, the mixed salads have the rating! Rich in vitamins, nutrients and minerals, it is the ideal dish to make quickly , when you don't know what to cook and you want a full meal . With this type of recipe, you can put almost anything you want, both sweet and savory foods. The key word being the balance of flavors . And in this little game, the chef and pastry chef Cyril Lignac has found THE recipe that will tickle our taste buds:a warm goat cheese salad with vitamins with some fruit and a tasty vinaigrette. It was during his cooking show "Tous en cuisine" live on M6, last June, that he shared this gourmet summer recipe full of pep .

The recipe for Cyril Lignac's ultra-vitamin warm goat cheese salad

Preparation time:10 minutes.
Cooking time:15 minutes.

To make a warm vitaminized goat cheese salad for 4 people you will need:

  • a handful of salad of your choice (romaine, arugula, lamb’s lettuce, batavia)
  • 200 g of fresh goat cheese
  • 20g flour
  • 2 egg yolks
  • 50g breadcrumbs
  • 200g cherries
  • 125 g raspberries or strawberries
  • 100 g peas
  • ½ melon
  • a few toasted pistachios
  • 3 tablespoons white balsamic vinegar
  • 4 tablespoons of olive oil
  • 2 teaspoons of honey
  • 1 teaspoon mustard
  • salt and pepper

Preparation steps:

  1. In a bowl, make the vinaigrette by mixing the mustard, honey, olive oil and white balsamic vinegar. Set aside in the fridge.
  2. Cook the peas in a pan of salted water. Drain and set aside.
  3. Cut the melon into small cubes, pit and cut the cherries in half. Book cool.
  4. Using two spoons, form balls of goat cheese.
  5. In one plate pour the flour, in another the beaten egg yolks and in a third the breadcrumbs.
  6. Dip the goat cheese balls in the flour, the beaten yolks then in the breadcrumbs to coat them.
  7. In a sauté pan with oil, fry them for a few minutes then drain them on absorbent paper.
  8. In a plate, place the previously washed lettuce leaves, peas, pieces of melon, cherries and raspberries or strawberry quarters.
  9. Dress the mixed salad with the homemade vinaigrette. Add the goat cheese balls. Season with salt and pepper and sprinkle with toasted pistachios. Enjoy!
