Cyril Lignac's Warm Goat Cheese Salad: Vitamin-Rich Gourmet Recipe with Exquisite Sweet-Salty Vinaigrette

Loaded with vitamins, nutrients, and minerals, they're the ideal quick dish for a satisfying complete meal—especially when inspiration runs low. Mix sweet and savory elements for perfect flavor balance. Renowned chef and pastry chef Cyril Lignac masters this with his warm goat cheese salad, brimming with vitamins, fresh fruits, and a delectable vinaigrette. He shared this vibrant gourmet summer recipe on his M6 show Tous en cuisine last June.

Cyril Lignac's Vitamin-Packed Warm Goat Cheese Salad Recipe

Preparation time: 10 minutes.
Cooking time: 15 minutes.

For 4 servings:

  • A handful of mixed greens (romaine, arugula, lamb’s lettuce, batavia)
  • 200 g fresh goat cheese
  • 20 g flour
  • 2 egg yolks
  • 50 g breadcrumbs
  • 200 g cherries
  • 125 g raspberries or strawberries
  • 100 g peas
  • ½ melon
  • A few toasted pistachios
  • 3 tablespoons white balsamic vinegar
  • 4 tablespoons olive oil
  • 2 teaspoons honey
  • 1 teaspoon mustard
  • Salt and pepper

Preparation steps:

  1. In a bowl, whisk the vinaigrette: mustard, honey, olive oil, and white balsamic vinegar. Refrigerate.
  2. Blanch peas in salted boiling water. Drain and set aside.
  3. Cut melon into small cubes; pit and halve cherries. Refrigerate.
  4. Form goat cheese into balls using two spoons.
  5. Prepare three plates: flour, beaten egg yolks, breadcrumbs.
  6. Coat cheese balls in flour, egg yolks, then breadcrumbs.
  7. Fry in a hot oiled sauté pan for a few minutes. Drain on paper towels.
  8. Arrange washed greens, peas, melon, cherries, and raspberries or strawberry quarters on plates.
  9. Drizzle with vinaigrette, top with hot goat cheese balls. Season with salt, pepper, and toasted pistachios. Enjoy immediately!
