Cyril Lignac's Apricot Crumble: Easy Gourmet Recipe with Fresh Seasonal Apricots

It's peak season for apricots! From June to August, these round, velvety orange summer fruits burst with juicy, sweet flesh that's ideal for countless recipes. Loaded with vitamins and sunshine, they excel in pies, cakes, cold soups, and especially crumbles. This beloved English dessert—tender fruit compote under a crispy, sweet crumb topping—is decadently gourmet yet surprisingly simple. Start with fresh seasonal fruit, butter, sugar, flour, and an egg. Renowned chef Cyril Lignac shared his foolproof version with RTL listeners, elevating it with ground almonds for superior flavor and texture. "You can also try ground hazelnuts or pistachios," he recommends.

Cyril Lignac's Apricot Crumble Recipe

The ingredients for 4 people:

  • 8 apricots from Roussillon or the Rhône Valley
  • 50g butter
  • 50 g of sugar
  • 50 g ground almonds
  • 20g flour
  • 1 egg
  • Honey
  • Lemon juice

Preparation steps:

  1. Preheat your oven to 180 degrees.
  2. In a saucepan or in the microwave, melt your butter over low heat.
  3. In a bowl, whiten the butter with the sugar, whisking vigorously.
  4. Then add the ground almonds, flour, egg and mix with your hands to crumble the dough.
  5. Wash and cut the apricots in half.
  6. In a pan, brown a piece of butter, a drizzle of honey and the lemon juice. Add the apricots to caramelize them and cook for a few minutes.
  7. In a baking dish, place the apricots. On top pour the crumble.
  8. Bake the whole thing in the oven at 180°C for 15-20 minutes. Enjoy!
