The concept draws directly from his own grandmother's vibrant market rituals: "I remember her heading to the market daily with her basket, biting into a peach or tasting a cherry. If it was ripe, she'd buy; if not, she'd spit it out with a grimace. No one minded—everyone knew and loved her," Scaravella shares on the restaurant's website.

"These women arrive with no formal training or restaurant experience, yet they cook like masters. Rotating the menu daily to showcase new cultures is a logistical challenge," Scaravella tells Indy100. The rewards are immense: not only exceptional food but also a celebration of diversity. "In these divisive times marked by racism and marginalization, I'm proud of our impact. We remove blinders and reveal people's true selves," he says, eyeing a British pudding specialist for his team next.
