Ingredients
- 4 washed tomatoes
- 2 red peppers, peeled and seeded (1 cut into small cubes)
- 1 peeled cucumber (½ cut into small cubes)
- 1 melon (¼ cut into small cubes)
- ¼ watermelon, cut into large cubes
- 1 seeded green jalapeño pepper
- A few halved cherry tomatoes
- Juice of 1 lemon
- A few mint leaves
- 20cl olive oil
- 5cl sherry vinegar
- Cumin, to taste
- Toasted bread croutons
- Fine salt and ground pepper
- Ice cubes
Step-by-Step Preparation
- In a blender, combine the tomatoes, whole red peppers, half cucumber, melon, watermelon cubes, jalapeño, lemon juice, and a few mint leaves. Add olive oil, sherry vinegar, ice cubes, a pinch of cumin, and salt. Blend until smooth, adding a splash of water if needed for consistency.
- In a bowl, toss the diced melon, cucumber, red pepper, and halved cherry tomatoes. Dress with olive oil, salt, and pepper. Spoon 1-2 tablespoons of this salad into chilled soup plates, then ladle the gazpacho alongside. Top with croutons and serve immediately for maximum refreshment.
