How to Make Cyril Lignac's Chocolate and Caramelized Peanut Tart

Ingredients

For the shortcrust pastry:

  • 250g flour
  • 100g caster sugar
  • 125g butter at room temperature
  • 1 egg
  • Salt

For the ganache:

  • 250g dark chocolate
  • 200g liquid cream
  • 50g butter

For decoration:

  • 50g plain peanuts
  • 1 tbsp. liquid caramel

Preparation

1. Make the shortcrust pastry: In a bowl, combine flour, sugar, and a pinch of salt. Add butter pieces and the egg. Mix with fingertips until smooth, form a ball, and chill for 1 hour.

2. Preheat oven to 150°C (th 5).

3. Line a tart pan with parchment paper.

4. Press dough evenly into the pan with hands, ensuring edges are firm. Prick the base with a fork.

5. Bake for 20 minutes until lightly golden.

6. Prepare ganache: Finely chop chocolate and place in a bowl.

7. Cut butter into pieces. Heat cream to a boil, pour over chocolate, wait 1 minute, then stir. Add butter and mix until smooth.

8. Let ganache cool to room temperature.

9. Pour into baked crust and refrigerate to set.

10. Warm caramel in a saucepan over low heat, add peanuts, and stir for 1 minute. Spread on parchment to harden. Garnish tart before serving.
