1. Make the shortcrust pastry: In a bowl, combine flour, sugar, and a pinch of salt. Add butter pieces and the egg. Mix with fingertips until smooth, form a ball, and chill for 1 hour.
2. Preheat oven to 150°C (th 5).
3. Line a tart pan with parchment paper.
4. Press dough evenly into the pan with hands, ensuring edges are firm. Prick the base with a fork.
5. Bake for 20 minutes until lightly golden.
6. Prepare ganache: Finely chop chocolate and place in a bowl.
7. Cut butter into pieces. Heat cream to a boil, pour over chocolate, wait 1 minute, then stir. Add butter and mix until smooth.
