Skinny Six Hummus Bowl
For 2 people

Ingredients:
– 400 g chickpeas (drained weight, from jar, bag or can)
– 1 spelt pita
– 1 eggplant
– 125 g falafel
– 50 g lamb's lettuce
– 4 tbsp hummus
Instructions:
– Preheat the oven to 200°C.
– Line a baking tray with parchment paper and spread the chickpeas on it.
– Drizzle the chickpeas with oil, season with pepper and salt, and roast in the oven for 20 minutes.
– Meanwhile, cut the pita in half and then into triangles.
– Drizzle the triangles with oil, season with pepper and salt. After 10 minutes, add them to the baking tray alongside the chickpeas.
– Slice the eggplant, drizzle with oil, salt, and pepper. Grill in a grill pan for 5 minutes per side until nice grill marks form.
– Heat a little oil in a frying pan and fry the falafel balls on all sides for 4 minutes.
– Assemble two bowls with lamb's lettuce, grilled eggplant, falafel, roasted chickpeas, homemade pita chips, and top with hummus.
