"Chatting with my brother Philippe, then in auditing, we knew Paris needed this. We created a space using alternative flours beyond wheat—rice, corn, buckwheat—and milks like almond or soy. Our food avoids hidden gluten in processed items, blending indulgence with health," adds Philippe.
