Making nachos with cheese and vegetables

I also added some minced meat when making these nachos, but that is not really necessary. Even without minced meat, these nachos are delicious to serve on the table. When I started making these nachos, my approach was to actually serve them as a meal. A bit à la Gauchos where you get them as a gigantic starter in quantities that you know for sure that you won't need a main course afterwards 😉 .

tip:You can also easily make guacamole for the nachos yourself!

What do you need to make nachos?

If you are going to make nachos, first consider what your approach is to determine the quantities. In this recipe I have based on the requirements for a family of 2 adults and 2 children.

Ingredients nachos

  • 2 cans of black beans
  • 2 tablespoons tomato paste
  • 1 red onion
  • a can of corn
  • 1 bag of grated cheese
  • 2 large tomatoes
  • 2-3 tablespoons taco mix
  • 150 grams of minced beef (can also do without)
  • 1-1.5 bag of nachos
  • fresh coriander

Making nachos in a jiffy

  • You start with this nachos recipe by turning on the oven. Preheat to 180°
  • Let the cans of black beans drain, then put them on a low heat with the tomato puree and 2 tablespoons of taco mix
  • Grow while the minced meat is in a pan with 1 tablespoon of taco mix
  • Chop the red onion
  • Cut the tomatoes into small pieces
  • Let the corn drain
  • Stir the ground beef and black beans together
  • cut some fresh coriander into small pieces

Place the nachos on a large plate or in a bowl. Divide the bean-minced meat mix over the nachos in the middle. Then top with the corn, the tomato and the chopped onion. Divide the grated cheese on top and put the dish or plate in the oven for 5 minutes so that the cheese can melt. Finally, when making nachos, sprinkle some nice fresh coriander over it and you're done.

Of course you can make the nachos even tastier with a good guacamole. After the dish comes out of the oven and the coriander is on top, put a good dollop of guacamole over the nachos.

psssttt… you can of course also make the most delicious guacomole yourself with one of these delicious recipes.

Tip:serve with a nice fresh salad, such as this waldorf salad recipe. But also just some iceberg lettuce is enough!
