1 large red bell pepper
4 tablespoons low-fat yogurt
1.5 tablespoons halvanaise (or similar product)
Parsley, chopped
Lemon juice
Snack vegetables of your choice
Cut off the top of the bell pepper and hollow it out with a knife or spoon, removing all the seeds. This makes an ideal dip holder.
Mix the yogurt with halvanaise, add lemon juice, and stir in the chopped parsley until it thickens to a perfect dipping consistency.
Pour the dip into the bell pepper and serve with snack vegetables on a platter.
