Tomato Risotto with Burrata: Easy 5-Ingredient Recipe from Looye Kwekers

Ingredients

  • 2 trays (360 g) Honeytomatoes®
  • 300 g risotto rice
  • 1 l vegetable stock
  • 1 ball of burrata
  • 5 g dried thyme

Preparation

  1. Preheat the oven to 180°C.
  2. Place the Honeytomatoes® on the truss in an oven dish. Sprinkle the dried thyme over them and roast in the preheated oven for 40 minutes.
  3. Halfway through the tomatoes' roasting time, add the risotto rice to a pan and stir-fry for 1 minute. Deglaze with a splash of vegetable stock. Reduce heat to low, let the rice absorb it, then gradually add the remaining stock as it absorbs.
