Who can resist the irresistible pairing of rich chocolate and zesty orange? This vegan chocolate orange cake delivers that classic flavor combo in a completely plant-based form, making it an ideal treat for World Vegan Month or any celebration.

Ingredients
Serves 10
- egg substitute for 5 eggs
- 250 g self-raising flour
- 250 g brown sugar
- 250 g Blue Band for cooking, baking and roasting
- 125 g dark chocolate
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tsp vanilla
- pinch of salt
- zest of 1 orange
- 100 g candied orange or chopped orange flakes
For the glaze
- 150 g dark chocolate
- 1 tsp orange zest
- 1 tbsp Blue Band Liquid Every Day
Preparation
- Preheat the oven to 180 degrees and grease a cake tin.
- In a small bowl, mix the egg replacer with the water according to the package. Set aside.
- Melt the dark chocolate au bain-marie.
- Mix the margarine with the brown sugar with a stick blender for 3-5 minutes. Add the egg replacement mixture, the self-raising flour, baking soda, apple cider vinegar, vanilla, orange zest and salt. Do not stir too much, so that the cake remains airy.
- Now fold the melted chocolate and candied orange into the batter.
- Pour the batter into the cake tin and bake the cake for 55-60 minutes or until a skewer comes out clean.
- Melt the chocolate for the glaze in a bain-marie as well. Add the other ingredients.
- When the cake has cooled, you can spread the icing over the top. Decorate with some extra orange zest if desired.
