A friend shared fresh organic chives with me, adding an authentic, earthy aroma. I combined them with garlic, butter, and Parmesan for this irresistible dish.
Typically, I slice potatoes for hash browns, but keeping these small ones whole resulted in perfectly tender interiors with crispy skins after oven roasting.

I ensured even coating of the garlic butter and chives mixture, then topped with Parmesan for extra depth. These potatoes pair beautifully with any main course.
