Homemade Tricolor Popsicles: Fresh Strawberry, Banana, and Blueberry Recipe

Popsicles are trending for good reason—no ice cream maker needed, just simple molds and fresh fruit. Riper fruit means naturally sweeter results with less added sugar. This expert-tested tricolor popsicle recipe layers strawberry, banana, and blueberry for a vibrant, refreshing treat.

Dessert or snack for 8 people Preparation time: 20 minutes + 4 hours freezing

Ingredients

  • 125 grams of sugar
  • 250 grams of strawberries
  • 1 lemon
  • 100 ml sugar syrup
  • 200 grams of banana pulp
  • 2 tablespoons yogurt
  • 200 grams of blueberries

Additionally needed: 8 (silicone) popsicle molds with sticks, blender or immersion blender with tall cup

Preparation Method

  • Combine the sugar with 100 ml water in a saucepan. Bring to a boil and simmer for 2 minutes until the sugar dissolves. Cool the syrup completely.
  • Wash the strawberries and remove the crowns.
  • Squeeze the lemon.
  • Purée the strawberries with 1 tablespoon lemon juice and 50 ml sugar syrup in the blender.
  • Divide the strawberry purée among the molds and freeze for 30 minutes.
  • Meanwhile, chop the bananas, then purée with the yogurt and 1 tablespoon lemon juice.
  • Remove molds from freezer, insert sticks, and add the banana mixture. Freeze for another 30 minutes.
  • Wash the blueberries and purée with 1 tablespoon lemon juice and 50 ml sugar syrup. Strain through a fine-mesh sieve, then fill the molds.
  • Freeze completely for at least 3 hours.
  • Carefully remove the popsicles from the molds.
