Ingredients
- 50 g pumpkin cubes
- 400 ml unsweetened almond milk
- 1 tbsp maple syrup
- 1 cup strong espresso
- 1 vanilla pod
- 1 tsp cinnamon
- ½ tsp ginger powder
- Pinch of ground cloves
- Pinch of ground nutmeg
- Pinch of black pepper
Equipment needed: immersion blender and blender

Preparation
- Boil the pumpkin cubes in a pan of water for 10-12 minutes, then purée with an immersion blender.
- In a saucepan, combine the almond milk, pumpkin purée, and maple syrup. Heat over medium until nearly boiling, then remove from heat and transfer to a blender.
- Add the espresso, vanilla pod seeds, and spices. Blend until extra creamy and frothy.
- Divide between two glasses. Top with whipped almond milk and a sprinkle of cinnamon.
