Ingredients

  • 50 g pumpkin cubes
  • 400 ml unsweetened almond milk
  • 1 tbsp maple syrup
  • 1 cup strong espresso
  • 1 vanilla pod
  • 1 tsp cinnamon
  • ½ tsp ginger powder
  • Pinch of ground cloves
  • Pinch of ground nutmeg
  • Pinch of black pepper

Equipment needed: immersion blender and blender

Preparation

  • Boil the pumpkin cubes in a pan of water for 10-12 minutes, then purée with an immersion blender.
  • In a saucepan, combine the almond milk, pumpkin purée, and maple syrup. Heat over medium until nearly boiling, then remove from heat and transfer to a blender.
  • Add the espresso, vanilla pod seeds, and spices. Blend until extra creamy and frothy.
  • Divide between two glasses. Top with whipped almond milk and a sprinkle of cinnamon.
