Ingredients:

  • 1 pumpkin
  • 4 tbsp tahini
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 garlic clove
  • Juice of 1 lemon
  • Splash of water
  • Salt and pepper
  • Cilantro (optional)

How to make it:
Preheat the oven to 200°C. Cut the pumpkin (with skin) into four large pieces and place on a baking tray. Drizzle with olive oil and roast for about 45 minutes until tender. Peel easily, then blend the flesh in a food processor or with an immersion blender, adding all other ingredients. Purée until smooth. Taste and adjust salt, pepper, or add chopped cilantro for extra zing.
