3 Roma tomatoes, diced
2 packs Rootzz of Nature Vegetarian Jackfruit Pieces
2 cloves garlic, crushed
2 bay leaves, dried
1 onion, sliced into rings
400g pumpkin, peeled and diced
400g cauliflower, cut into florets
15g fresh parsley, roughly chopped
400ml vegetable stock
2 tsp ground cumin
2 tsp paprika powder
sunflower oil
salt and pepper
1. Heat sunflower oil in a deep skillet over medium heat. Sauté the onion rings for a few minutes, then add the crushed garlic, diced pumpkin, and cauliflower florets. Cook for 4-5 minutes until slightly softened.
2. Pour in the vegetable stock, followed by the diced tomatoes, ground cumin, paprika, and bay leaves. Simmer gently for 25 minutes. Season with salt and pepper to taste.
3. In the last 5 minutes of simmering, heat sunflower oil in a separate frying pan over high heat. Fry the Rootzz of Nature Vegetarian Jackfruit Pieces for 2-3 minutes until golden and crispy.
4. Remove the bay leaves from the stew. Adjust seasoning if needed. Stir in the crispy jackfruit pieces just before serving.
