Festive Pulled Oats Quiche: Cheesy, Spicy Recipe for Winter Gatherings

Ingredients

Dough

  • 80 g butter
  • 1.5 dl wheat flour
  • 1.5 dl grated cheese
  • 30 ml cold water

Filling

  • 1 pack of Pulled Oats® Tomato
  • 1 small onion
  • 1 garlic clove
  • 80 g fresh baby spinach
  • 2/3 dl sun-dried tomatoes
  • Fresh basil
  • Oil for frying
  • 2 small eggs
  • 1.5 dl mascarpone
  • 1.5 dl grated mozzarella
  • Salt
  • Black pepper

Preparation Method

  1. Preheat the oven to 200 °C.
  2. Mix the softened butter, grated cheese, water, and wheat flour. Press into a 24 cm cake tin; the dough may extend over the edges. Bake for 10-15 minutes.
  3. Sauté finely chopped garlic and onion in oil until translucent. Add spinach and cook until moisture evaporates. Spread over the crust, then top with sun-dried tomatoes, Pulled Oats, and basil.
  4. Whisk eggs, mascarpone, grated cheese, salt, and pepper. Pour over the filling. Bake for 30 minutes, until the center is fully set. Cool 5-10 minutes before slicing.
  5. Serve with a fresh salad.
