This eye-catching spiral quiche combines fresh zucchini and carrots in a stunning design. It's simple to assemble and always impresses.
Ingredients (serves 4)
- 2 zucchini
- 2 winter carrots
- 3 eggs
- 2.5 dl cream
- Puff pastry
- Butter
- Pepper
- Salt
- Cheese
Preparation
- Wash the zucchini and carrots. Slice thinly using a mandoline or vegetable peeler. Blanch in boiling water, then drain.
- Grease the baking pan and line with puff pastry.
- Roll a carrot slice into a spiral. Wrap with a zucchini slice, then a carrot slice, alternating until the pan is full.
- Whisk eggs with cream, pepper, salt, and optional herbs. Pour over vegetables and top with cheese.
- Bake at 180°C for about 40 minutes until golden.

Add herbs, extra veggies, or cheese slices between layers for variety.
