Recipe for a spiral quiche with carrot and zucchini

This spiral quiche looks very nice and is not difficult to make.

Ingredients for 4 people

  • 2 courgettes
  • 2 winter carrots
  • 3 eggs
  • 2.5 dl cream
  • Puff pastry
  • Butter
  • Pepper
  • Salt
  • Cheese

Preparation

  1. Clean the courgettes and carrots. Cut thin slices with a mandoline or vegetable peeler. Blanch them in boiling water.
  2. Grease the baking pan and line it with puff pastry.
  3. Roll up a slice of carrot. Wrap a zucchini around it, a carrot around it and continue until your baking pan is filled.
  4. Beat the eggs with cream, pepper, salt and possibly some other herbs to taste. Pour the mixture over the vegetables in the tin and finally sprinkle some cheese over the quiche.
  5. Bake your spiral quiche at 180 degrees for about 40 minutes.

Variation tip
Vary with herbs, extra vegetables or cheese slices between the zucchini and carrot.
