A flavorful grilled salmon dish elevated with a zesty spicy cranberry sauce—ideal for Pentecost gatherings.
Ingredients for 4 servings
• 4 x 100g salmon fillets
For the sauce
• 500 ml Ocean Spray® Cranberry Classic juice
• 150 g Ocean Spray® Craisins® dried cranberries
• 1 small onion, finely chopped
• 1 tsp grated orange zest
• ¾ tsp five-spice powder
For the marinade
• 2 tbsp soy sauce
• 2 tbsp orange juice
• 1 tsp honey
Preparation
1. In a shallow glass dish, whisk together soy sauce, orange juice, and honey. Add salmon fillets skin-side up, cover, and marinate in the fridge for 30 minutes.
2. Combine all sauce ingredients in a saucepan. Bring to a boil over medium heat, stirring. Reduce heat and simmer 6-8 minutes until thickened. Cool slightly.
3. Preheat grill to medium. Place salmon skin-side down and grill 20-30 minutes until it flakes easily with a fork.
4. Divide salmon into 4 portions and serve with the sauce.
