Ingredients for Vegan Mango Fajitas

Serves 4

  • 250 g tofu
  • 1 tbsp oil
  • 1 red bell pepper
  • 1 white onion
  • 1 bag Santa Maria Fajita Seasoning Mix Original
  • 1 mango
  • 1 pack Santa Maria Tortilla Original Medium

Optional toppings

  • 1 head of lettuce

  • guacamole

Step-by-Step Preparation

1. Dice the tofu, bell pepper, onion, and mango into bite-sized cubes.
2. Heat the oil in a pan and fry the tofu until golden brown.
3. Add the onion and bell pepper, stir-frying over high heat for about 1 minute.
4. Reduce the heat, stir in the Santa Maria seasoning mix and mango, and cook for 2 minutes. Add a splash of water if the mixture seems dry.
5. Warm the tortillas according to package instructions.
6. Layer lettuce on each tortilla, top with the fajita filling, then fold and finish with Chunky Wrap Salsa and guacamole.
