Traditional fajitas often feature meat, but this vegan version with seasoned tofu is just as simple to prepare and bursting with flavor. Combined with bell peppers, onions, fresh lettuce, and creamy guacamole, it delivers a nutritious, crowd-pleasing meal.
Serves 4
1. Dice the tofu, bell pepper, onion, and mango into bite-sized cubes.
2. Heat the oil in a pan and fry the tofu until golden brown.
3. Add the onion and bell pepper, stir-frying over high heat for about 1 minute.
4. Reduce the heat, stir in the Santa Maria seasoning mix and mango, and cook for 2 minutes. Add a splash of water if the mixture seems dry.
5. Warm the tortillas according to package instructions.
