Ingredients (Serves 4)
3 bell peppers
1 large onion
1 garlic clove
4 waxy potatoes
2 tbsp butter
300g diced beef
1 tbsp tomato purée
1 tbsp flour
1 tbsp paprika powder
1 liter beef stock
1 bay leaf
Salt
Freshly ground black pepper

Preparation
Halve the bell peppers, remove the seeds, and cut into strips. Peel and finely chop the onion. Crush the garlic clove. Peel the potatoes and cut into cubes.

Heat the butter in a large pan and brown the diced beef on all sides for about 5 minutes. Add the onion, bell peppers, garlic, and tomato purée; sauté for 3 minutes. Sprinkle over the flour and paprika, stirring for 1 minute. Pour in the beef stock and add the bay leaf. Bring to a boil while stirring.

Reduce to a low simmer, cover, and cook for 2 hours. Add the potato cubes in the last 10 minutes. Remove the bay leaf, then season with salt and pepper to taste. Ladle into 4 bowls and serve with crusty bread.
