Vibrant Orange Carrot Soup Recipe: Fresh, Spicy Vegan Delight

Ingredients
1 large potato
5 carrots
1 onion
3 leeks
1 tablespoon Alpro Tasty Healthy Spread
1.5 l water
Juice from 1 orange
2 tablespoons vegetable stock
100 ml Alpro Cuisine
Black and red pepper
Pinch of salt
4 slices of bread
Tomato tapenade

Preparation
1. Wash the potato, carrots, onion, and white parts of the leeks, then chop into small pieces. Sauté the vegetables in Alpro Tasty Healthy Spread until softened and translucent.
2. Add the water and orange juice, stir in the vegetable stock, bring to a boil, then simmer for 30 minutes.
3. Remove from heat, stir in most of the Alpro Cuisine (reserving a little for garnish), and season with salt, black pepper, and red pepper to taste.
4. Spread the bread slices with Alpro Tasty Healthy Spread and tomato tapenade, then grill for 2 minutes until golden.
